In Mailchimp, open Account, then Extras, then API keys, and create one.

Open Resources, add a resource of type mailchimp. Paste the key, and set server to the data centre suffix — the us12 in a key ending -us12.

What is server for?

Every request goes to your account's data centre, and the host is built from it. It is the suffix of your own API key.

Is my key stored on the hub?

Never. It lives only in your own Windmill workspace, encrypted at rest.
